Make Ahead Blueberry Quinoa Oat Parfaits are an easy, healthy way to enjoy breakfast or snack! Rolled oats and quinoa are combined with fresh blueberries, a tad of pure maple syrup and AVOCADO to make a nutritious breakfast bar, and it’s layered with Siggi’s plain yogurt for the ultimate parfait.

You know when you meet someone and connect instantly? You learn about how many things you have in common with one another, and figure out that you love all of the same things? That adequately describes my relationship with Siggi’s yogurt, ha! Finding brands that hold the same values when it comes to healthy living is huge, because I can then share the goodness with YOU!

Siggi’s is an Icelandic style skyr. What makes the brand so awesome – besides the taste – is that it has one of the lowest contents of sugar. The plain yogurt in this recipe holds high standards at only 3g of sugar, and even the other flavors stay around 10g. There are no artificial sweeteners or high fructose corn syrup; most of the sweetness comes from the fruit itself or a tiny bit of organic agave nectar/cane sugar (source).

So this yogurt is low in sugar. What’s the big deal? Pick up any other brand of flavored yogurt and it will most likely have anywhere between 17 and 30g of added sugar. To put things into perspective, the recommended daily limits of added sugar is 25 grams for women and 36 grams for men (source: AHA). I don’t know about you, but I’d rather “save” my added sugar intake for things like ice cream or baked goods ;-). That’s where Siggi’s comes in! By enjoying something as creamy, healthy, and low-in-sugar as Siggi’s, you don’t have to fret about hitting that added sugar intake limit.

Now that I’ve professed my undying love for Siggi’s yogurt, let’s get to the recipe! Make Ahead Blueberry Quinoa Oat Parfaits are great if you’re in the boat of prepping for meals throughout the week. Before you begin layering the parfait, the blueberry quinoa oat bars must be baked. I love the nuttiness that the cooked quinoa brings to the table, and the addition of rolled oats holds up the texture a little bit more – it’s not as soft as plain quinoa. A small amount of pure maple syrup is mixed in for natural sweetness, and the bars finish off with a gentle fold of blueberries.

Oh! Before I forget to tell you, I threw in a not-so-secret ingredient: mashed avocado. Yep, that’s why the above picture has tiny bits of green. I wanted to add some healthy fats into the recipe, and was interested in trying the recipe with something other than nut butter. Don’t get me wrong, nut butter is amazeballs. But it feels (and tastes) good to switch things up sometimes!

Once the blueberry quinoa oat bars are made and the parfaits are assembled, get excited to dine in style. Kidding, but seriously. Parfaits are 100% fancy in their presentation, but are incredibly easy to prepare. Layers of creamy Siggi’s yogurt, alternated with nutty, fruity, oat-y layers of the breakfast bar are enough to satisfy all of your breakfast needs! Plus, it’s packed with nutrition: fiber from the chia seeds and rolled oats, carbs from the quinoa and blueberries, and healthy fats from the avocado and yogurt. Ba-bam!

Make Ahead Blueberry Quinoa Oat Parfaits are an easy, healthy way to enjoy breakfast or snack! Rolled oats and quinoa are combined with fresh blueberries, a tad of pure maple syrup and AVOCADO to make a nutritious breakfast bar, and it’s layered with Siggi’s plain yogurt for the ultimate parfait.

Ingredients

  • 1 cup rolled oats
  • 1 cup cooked quinoa
  • 1/3 cup pure maple syrup
  • 3 tablespoon chia seeds
  • 1 cup mashed avocado
  • 2 eggs
  • 1/4 teaspoon Kosher salt
  • 2 tablespoons peanut butter
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla
  • 1 cup blueberries
  • 6-8, 5.3 oz containers of Siggi’s 0% plain

Instructions

Preheat oven to 350 degrees F. Line a 9x9 baking pan with parchment paper and spray lightly with nonstick cooking spray. Set aside.

In a large bowl, whisk together oats, baking powder, chia seeds, salt. Using a spatula, fold in quinoa. Combine well.

In a medium bowl, combine maple syrup, avocado, eggs, peanut butter, lemon juice, and vanilla. Pour wet mixture into bowl with oats and quinoa and mix until fully combined. Gently fold in blueberries.

Pour batter into prepared pan, smooth batter to an even surface with spatula. Bake on a rack placed in center of oven for approximately 25-35 minutes, or until firm to the touch and lightly golden brown.

Remove pan from oven and cool completely on a cooling rack. Carefully remove and cut into squares. To assemble parfaits: alternate layers of bars and yogurt. Top with blueberries or more crumbled pieces of bar. Store parfaits, covered, in fridge and serve chilled. Bars can be stored separately in an airtight container for 3-5 days.

    SIGGI’s is my favorite; it has a slight sweetness about it, but the protein it packs is amazing. I also really love that you used it for these parfaits; this is a unique idea for parfaits.

    I really want to try Siggis but they don’t have them in my area. I don’t like any added sugar in my yogurt, I love the tangy taste of plain yogurt. If I sweeten it I add a bit of stevia or just plain vanilla extract 🙂 This parfait looks heavenly!
