In case you missed it, I’m almost positive that I’m lactose intolerant. I talked about it a little bit in this Life Lately post. Luckily, it hasn’t made life too complicated. There are a ton of dairy-free options in the grocery store, and I’ve been careful about ordering off of the menu when eating out. Here are the changes I’ve made so far:
- Almond and coconut milk creamer in my coffee instead of regular milk
- Cashew milk yogurt, coconut milk yogurt, or lactose-free yogurt
- No more cheese in recipes, and no more regular ice cream (two things I miss the most!)
- Cashew milk ice cream
Although it hasn’t been as challenging as I thought it’d be to cut out dairy, Ray did mention a couple days ago that he misses grilled cheese dinners; I guess he’s having a pretty rough time with it, haha!
One thing I truly miss is Siggi’s yogurt. Y’all know how much I rave and love on the products, and for good reason, too. Siggi uses real ingredients and minimal added sugar. The yogurts are notorious for only having single-digit grams of sugar, and that’s a huge plus in our house. Regular yogurt has higher amounts of protein than its non-dairy alternatives, which helps you stay fuller longer, and serves as a great post-workout snack.
When it came time to make this recipe for Foolproof Cherry Overnight Oats, I wanted to be able to make two options: one for a dairy lover, and one to meet non-dairy needs (i.e. for my lactose intolerant friends out there). The recipe serves two, and it’s incredibly easy to make both options at the same time – just make sure you don’t get the jars mixed up!
I used fresh cherries for this recipe, and man-oh-man did it turn the awesome sauce on for the overnight oats. The cherries added texture to the soft oats, and a natural sweetness that can’t be beat! Just imagine enjoying a spoon of the oats at a time, and biting into a sweet and juicy cherry while you’re at it…
Mixing the oats in pint-sized (16 oz) mason jars made for minimal clean up in the kitchen. All of the ingredients go right into the jars, and after mixing with a spoon, just cover and store in the fridge overnight. I tend to rush around in the mornings before work, and having the overnight oats ready to enjoy was key for a smooth transition out of the house!
Can we get back to the texture of these oats again? Something I wanted to keep consistent between the dairy and dairy-free options was the texture: creamy, yet not too soft. Using dairy products always gets us that nice creamy texture, and luckily, the non-dairy products did the same! I used coconut milk yogurt and almond milk for the dairy-free jar and the consistency turned out identical to the dairy option.
I’ll definitely be making more of these this weekend! Ray had them when he came back from his night shifts at the hospital – when he’s exhausted yet hungry – and I’ve been eating them in the mornings before work. Overnight oats are great for breakfast, but I’d also recommend them for a snack at work or after a workout. The mason jars make them portable and you can easily store it in the fridge or a lunch bag packed with ice!

- 2/3 cup old fashioned rolled oats (gluten free if needed)
- 1/4 cup regular milk
- 1/4 cup non-dairy milk
- 5.3 oz Siggi's yogurt of your choice (I used Nectarine)
- 5.3 oz non-dairy yogurt (I used coconut milk yogurt)
- 2 tablespoons chia seeds
- 1 tablespoon honey
- 1 cup cherries, pitted and sliced in half
For this recipe, you will need two 16-ounce mason jars. In the first, fill with the following: 1/3 cup old fashioned rolled oats, 1/4 cup regular milk, 1 5.3-ounce container of Siggi's yogurt, 1 tablespoon chia seeds, 1/2 tablespoon honey, and 1/2 cup cherries. Mix and cover with lid.
In the second mason jar, fill with the following: remaining oats, 1/4 cup non-dairy milk, 1 5.3-ounce container non-diary yogurt, and remaining chia seeds, honey, and cherries. Mix and cover with lid.
Store both mason jars in the fridge overnight, or for at least two hours before enjoying. Serve chilled.
