Well, my non-dairy journey is still going strong. Ish. In the event that eating dairy is unavoidable (i.e. celebrating our anniversary with our wedding cake that had a delicious filling of Bavarian cream), I take a Lactaid pill so that my body can process that pesky lactose. But in normal, day-to-day living, having dairy alternatives isn’t too bad! Granted, I miss sprinkling shredded cheese on everything and having cheese in my burger and sandwiches, but it’s all good in the kitchen.

There are (many) times where I miss having real ice cream, but then this Vegan Matcha Ice Cream with Medjool Dates happened. Y’all. Just take a quick look at this beauty:

Doesn’t it look creamy? It’s because it IS! Coconut cream is the not-so-secret key to giving the ice cream mixture that smooth and creamy texture we get with regular dairy ice cream. I thought about pulling out the ice cream maker for this recipe but opted for a no-churn option because it just makes dessert THAT much more convenient and easy to make during the week when you want a nice treat, without all of the refined sugar.

Oh! That reminds me. You’ve probably concluded that this Vegan Matcha Ice Cream is made with Medjool dates. Rather than using refined sugar to sweeten the ice cream mixture, I soaked Medjool dates in hot water before adding them to the blender. Besides using it as an alternative to refined sugar, Medjool dates also packs in potassium, which can contribute to good heart health and muscle function!

If you’re curious about the flavor, let’s get right to it – Matcha fans, that ice cream bowl has your name on it! After success with the Matcha Almond Energy Bites, you can say I went a little Matcha-crazy. A few teaspoons of Matcha green tea powder is all you need to put together a batch of ice cream, and a little Matcha goes a long way.

After making some for friends and family (or just yourself, because there ain’t nothin’ wrong with that), dig your spoon into a cup of this Vegan Matcha Ice Cream. You’ll be able to see the creaminess, as the coconut milk and cream start to melt along the insides of the bowl. But wait! The flavor. Coconutty without being overwhelming. Vegan Matcha Ice Cream with Medjool Dates

Vegan Matcha Ice Cream with Medjool Dates is your number one way to cool off this summer! Made with coconut milk, coconut cream, and no refined sugar, it’s sure to be a hit at your summer party or even just a weeknight at home.

Ingredients

  • 1 13.5 oz can full-fat coconut milk
  • 1 5.4 oz can coconut cream (not cream of coconut)
  • 3 tablespoons Matcha green tea powder
  • 3/4 cup Medjool dates, pitted and soaked in hot water to soften
  • 1 teaspoon vanilla extract
  • 1 small pinch Kosher salt

Instructions

In a small bowl, soak Medjool dates in hot water for about 10 minutes to soften. Drain and set aside.

In a high-speed blender, combine above ingredients and start with low speed, increasing to medium/medium high to completely blend Medjool dates with ice cream mixture. Blend until smooth and creamy in texture.

Transfer ice cream mixture to a parchment paper-lined container (I used a loaf pan) and cover with plastic wrap. Remove from freezer a couple of times (every 20-30 minutes) to stir, in order to avoid icy texture.

Before serving, set ice cream out on the counter for about 20 minutes to soften.
